Nutella Brownie Cookie Stacks Recipe – Simmons Family Style
I package Double Stuff Oreos or other preferred chocolate sandwich cookies
I Jar Nutella
1 Package Brownie Mix. we like Ghiradelli Double Chocolate
Ingredients for Brownie Mix (Eggs, Oil and Water)
Preheat oven to 350 degrees.
Line two (12 cup) cupcake pans with liners
Prepare the Brownie batter to package directions. Set aside batter.
Spread 1 teaspoon Nutella on top of 1 Oreo cookie. Place Nutella side- up in cupcake liner. Top with approximately 1/4 cup brownie batter.
Bake 10-15 minutes until desired gooeiness. Cookie should be firm and shiny (not dry looking).
Serve when cool. Store in covered container for up to 1 week.
Notes & Tricks of the Trade:
These cookies easily over-bake. Our 1st batch came our dry (albeit tasty). Bake the cookie until just done. We like them even slightly underdone so that the gooey chocolate makes for a nice mix with the creamy Nutella.
We tried stacking two cookies together and sandwiching the Nutella in between. This is good but it can get tricky to top with the Brownie mix. We found that 1 Oreo works best.
